    About our Estate

    A gate from Europe to the Near-East, Lebanon prides itself with a history intimately connected to wine. Along Iraq and Armenia, Lebanon has been the cradle of winemaking since the sixth millennium BC with its very own Bacchus temple (Roman god of wine), erected sometime during the first two centuries of our era. Enriched by the knowhow of French missionaries since the nineteenth century, the country of the cedar enjoys an ideal climate for vine growing . It benefits from snow and rainfall during winter, abundant water springs, and plenty of sun during the rest of the year, and most importantly a great terroir.

     

    At 1200 meters high, located on the slopes of the Mount-Lebanon mountains, facing the magnificent Bekaa Valley, the estate has been prospering since the first plantations in 1994. In 2006, after spending many years in Saint-Emilion, Sebastien Khoury the owner and winemaker of Domaine de Baal came back to Lebanon and started building the winery and made the first vintage of the estate.
    The limestone and clay soil, the organic processes we follow and which fully respect the life cycles of both the soil and vineyard, along with the low intervention in the cellar, allow us to produce every year fine and elegant wines reflecting this beautiful mediterranean terroir.
     

    A propos du Domaine

    Porte d’entrée de l’Europe vers le Proche-Orient, le Liban peut s’enorgueillir d’une Histoire intimement liée au vin. Berceau de la viticulture depuis 6000 av. J.-C. avec l’Irak et l’Arménie, célèbre pour son Temple de Bacchus (le dieu romain du vin) érigé au cours des deux premiers siècles de notre ère, riche du savoir-faire des missionnaires français depuis le XIXe siècle, le pays du Cèdre jouit d’un climat idéal pour la culture de la vigne. Neige et pluie en hiver, sources d’eau en abondance, soleil généreux durant le reste de l'année et surtout un superbe terroir.

     

    A 1200 mètres d'altitude, sur les contreforts du Mont-Liban, la propriété surplombe la magnifique plaine de la Bekaa, et ce depuis ses premières plantations en 1994. En 2006, après avoir passé plusieurs années a Saint-Emilion, Sébastien Khoury vigneron et propriétaire du Domaine de Baal, rentre au Liban et lance la construction de la cave et du premier millésime du domaine.

    Nos sols argilo-calcaires, notre travail en culture biologique dans le respect de la vie des sols et des cycles de la vigne, ainsi que notre approche peu interventionniste a la cave nous permettent de produitre chaque année des vins précis et élegants reflétant ce magnifique terroir méditerranéen.

    With a minimalist eco-friendly buildings and architecture, our one-meter width walls along with the green roofs covered with soil and plants, provide the ideal environment for the winemaking and maturation processes.
    The vaulted oak barrels cellar was built halfway underground to guarantee an average temperatures of 13 to 16ºC and humidity levels of 60 to 70% all year long.

    Notre cave, construite de façon écologique et minimaliste, en pierre de taille avec des murs d’un mètre d’épaisseur, des toits végétaux recouverts de terre et de diverses plantes offrent un cadre idéal pour la vinification et l’élevage du vin. Le chai à barriques, entièrement voûté et construit à moitié sous terre, garantit une température moyenne de 13 à 16ºC toute l’année et un taux d’humidité naturel de 60 à 70%.

    40% Cabernet Franc, 40% Syrah and 20% Cabernet Sauvignon

    Organic farming.

    Average of 25 hl/ha.

    Whole cluster fermentation with wild yeasts and low intervention

    Ageing in french oak barrels (new and used) for 16 to 18 month.

    No additives - No fining - No filtration.

    Domaine de Baal - White

    50% Chardonnay and 50% Sauvignon blanc

    Organic farming.

    Average of 30 hl/ha

    Fermentation with wild yeasts in french oak barrels and aged in tanks for 8 to 10 month.

    No additives - No fining - No filtration

    Total SO2 <50mg/l

    Le Petit Baal - Red

    80% Syrah and 20% Cinsault

    Organic farming.

    Average of 35 hl/ha

    Ageing in used french oak barrels for 8 to 10 month.
